What GOOD universities accept Use of Maths/Applied Maths A-level in their maths requirement in the subject ECONOMICS. Or should I stay a third year in college and do AS maths instead?

This will depend on the University, if a student has A2 Economics and an A level in use of Maths/applied maths that would normally be fine for most, particularly if the GCSE was at Grade B in Maths
